Unlike many other Caribbean fisheries, Florida regulations prohibit tailing or freezing at sea. Lobsters must be landed whole, either live or fresh on ice.

The Florida spiny lobster fishery is a limited entry, fully managed fishery overseen by the U.S. Government. It is recognised for its responsible management, strong conservation outcomes, and long-term resource stability.
Processing follows a HACCP-based quality assurance program, with regular third-party audits ensuring full FDA and EU compliance.
